ARABIAN is a spice originating in the Middle East. Baharat is the Arabic word for "seasoning," which comes from the word "bahar" meaning pepper.
There is no single recipe for Baharat, each country has its own variation. Some of them include rose petals and other mint. In common consensus, all include peppers. The important thing in Baharat is that it should have a unique, harmonic flavor where no ingredient should stand out. Its final result should be aromatic, with "hot" notes of spices and not peppers.
ARABIAN seasoning (Baharat) is used as a multipurpose spice in the Middle East cookery, especially in Jordan, Syria and Lebanon, where it is used to flavor lamb, beef, poultry, vegetables, greens, grain, rice and some fish dishes.
The exotic flavors of this blend enhance the dishes of meat, couscous, grains, greens and vegetables. It is aromatic and gives a special touch to any dish, especially rice, lentils or pilaf. For recipes for ground beef, the ideal is to mix it in the meat before cooking.
Use the ARABIAN Baharat seasoning in lamb or beef. Rub it into the pieces before grilling or baking. Another option is to add it in rice dishes like the famous "pilaff".
It is excellent for chicken or lamb marinades. It is delicious, mix ARABIAN seasoning with butter, pass on pita bread and take to the oven.
INGREDIENTS: cumin, coriander, sweet paprika, cinnamon, nutmeg, black pepper and cardamom.
DIRECTIONS FOR USE: Scrub a generous amount of the mix into the meat of your choice and keep it in a closed container in the refrigerator for 4 to 24 hours before baking or grilling. The longer the time, the better the flavors and aromas will be incorporated into the meat. For 250g of raw meat or 250g of raw rice use 1 teaspoon (5g).
